What is the cream and how is the cream in Vertuo?

The cream is an emulsion closely related to the quality of the coffee and its function is to protect the flavor and aromas.

Depending on the extraction system used, the crema will have different characteristics:

  • Original System - Thanks to the pressure system used to obtain espresso-type coffees, the aromas and natural oils of the coffee are captured in the resulting crema. This means that the crema keeps all the aromas of the coffee.
  • In the Vertuo system the crema has no flavor or aroma, it is a dense and dry crema and its function is twofold: to protect the aromas that are in the liquid, making the tasting longer, and to reduce the bitterness. In the case of Vertuo, the aromas are in the liquid, not in the cream.
