Crema is an emulsion closely related to the quality of coffee, also it preserves the flavor and aromas.
The crema have different characteristics depending on the extraction system used:
Original System – Original machines use a high-pressure 19 bar extraction system, the aromas and natural oils of the coffee are trapped in the resulting crema. As a result, the crema keeps all the coffee aromas.
Vertuo system - crema is dense, dry and tasteless. The crema protects the aromas, so the tasting will be longer. It reduces the bitterness too. For Vertuo the aromas are in the brew, not in the crema.
